Grilled Watermelon Salad

Watermelon is the sweet, juicy fruit that is depended upon to provide a sweet snack in the midst of a hot and humid summer day.  Next time you're craving watermelon, add a twsit: grill it and make a little salad.  With a few minutes on the barbecue grill, watermelon is transformed into a surprisingly meaty fruit. If you’ve never tried it before (or even if you have), we highly recommend adding this grilled watermelon salad to your summer rotation.  We think you’ll be delighted with the outcome!

Grilled Watermelon Salad

Total Time: 20 Minutes | Serves 8

Ingredients:

  • 1 Small Seedless Watermelon
  • Ten Basil Leaves, rolled up and sliced into 1/8th Strips
  • 1 C Feta
  • 1 C Kalamata Olives
  • Extra Virgin Olive Oil, to taste
  • Balsamic Vinegar, to taste
  • Salt, to taste
  • Pepper, to taste

Directions:

  1. Cut watermelon into 2 inch thick steaks.
  2. Heat olive oil in a grill pan on high. Place watermelon onto the pan and grill until marked on both sides, about two-three minutes per side.
  3. Slice watermelon into 2 inch by 4 inch strips. 
  4. Assemble on plate, adding olives, feta, basil, olive oil, balsamic vinegar, salt and pepper.
