Charred Chicory
Total Time: 25 Minutes | Active Time: 15 Minutes | Serves Eight
Ingredients:
- 4 Chicory chopped in half and coated with olive oil
- Salt and Pepper
- 6 T olive oil
- 8 Sprigs Thyme
- 6 Sprigs Rosemary
- 1/4 C Parsley
- 4 Cloves Garlic
- Zest of 2 oranges
- Juice of 2 oranges
- 1 T Sugar
Directions:
- Prepare the Marinade: Finely chop the garlic and green herbs and mix with the olive oil, orange zest, orange juice, and sugar.
- Marinate for 30 minutes.
- Heat up a barbecue or grill pan.
- Grill the chicory on the cut side and turn when dark-brown stripes appear. Season to taste with salt and pepper.
- Transfer to the oven for further cooking, on 300 degrees for 20 minutes to soften the chicory.
