Charred Chicory

Total Time: 25 Minutes | Active Time: 15 Minutes | Serves Eight

Ingredients:

  • 4 Chicory chopped in half and coated with olive oil
  • Salt and Pepper
  • 6 T olive oil
  • 8 Sprigs Thyme
  • 6 Sprigs Rosemary
  • 1/4 C Parsley
  • 4 Cloves Garlic
  • Zest of 2 oranges
  • Juice of 2 oranges
  • 1 T Sugar

Directions:

  1. Prepare the Marinade: Finely chop the garlic and green herbs and mix with the olive oil, orange zest, orange juice, and sugar. 
  2. Marinate for 30 minutes.
  3. Heat up a barbecue or grill pan.
  4. Grill the chicory on the cut side and turn when dark-brown stripes appear. Season to taste with salt and pepper.
  5. Transfer to the oven for further cooking, on 300 degrees for 20 minutes to soften the chicory.
