Avocado Salsa Verde
Tomatillos, often referred to as tomates verdes or green tomatoes in Mexico are considered a staple of Mexican cooking and grow everywhere in the Western Hemisphere. Tomatillos are a member of the nightshade family, related to the tomato though a bit meatier. We encourage you to look for tomatillos in your regular grocery store, however, if you can’t get your hands on them, you can substitute in a regular, red tomato. Isaac paired this Avocado Salsa Verde sauce with delicious fish tacos that he enjoyed for Cinco de Mayo, though we recommend it for just about any celebratory occasion on every sort of taco!

Avocado Salsa Verde
Total Time: 40 Minutes | Active Time: 10 Minutes | Serves Eight
Ingredients:
- 4 tomatillos (or plum tomatoes)
- 1 avocado
- 3 garlic cloves, diced
- 1 jalapeno, diced
- 1 C of mayo
- Pinch of salt
- 1/2 C of cilantro
- 2 limes, juiced
Directions:
- Roast tomatillos for 30 minutes at 400 degrees.
- Add mayo, avocado, garlic, jalapenos, salt, & tomatillos to blender. Blend until smooth.
- Stir in lime juice & cilantro.
- Serve as desired.
