Churros
The cinnamon-y dessert that one typically associates with dessert or summer time fairgrounds were actually first served as a breakfast food accompanying café con leche. History is divided on the origin of this item as some say Portuguese sailors brought churros to Europe from China and others say Spanish shepherds living high in the mountains with no access to bakeries created these themselves. Regardless of origin, this tasty treat has traversed the globe for the past few hundred years and more recently, cemented itself as an essential amusement park treat.

Ingredients:
- 1 C water
- 2 1/2 T white sugar
- 1/2 t salt
- 2 T vegetable oil
- 1 C all-purpose flour
- 2 qt oil for frying
- 1/2 C white sugar, or to taste
- 1 t ground cinnamon
Directions:
- In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat.
- Stir in flour until mixture forms a ball. Heat oil for frying in deep-fryer or deep skillet to 375 degrees.
- Pipe strips of dough into hot oil using a pastry bag.
- Fry until golden; drain on paper towels.
- Combine 1/2 cup sugar and cinnamon.
- Roll drained churros in cinnamon and sugar mixture.
